How to Make a Layered Shooter

Layered ShooterWell it seems Mixology Monday piqued my curiosity about shooters. Why? Well because they seem to be very photogenic and colourful. So with my new lightbox for photographs I decided that I’m make a few shooters and then photograph them. It worked out fairly well, since I was taking pictures with one hand and holding a pipette in the other. Yep, I use a pipette to make layered shooters because it is a magnitude easier and a whole lot faster. The spoon thing is old school and can result in a mess, but with a pipette you never make a mistake, unless you get the liqueur order wrong. Follow along for a little more enlightenment.

PipetteA pipette is like a large glass straw with a bulb in the middle (see picture). A few years back I picked up a box of 9ml pipettes (odd size, but perfect for a 30ml shot glass) on eBay for a few bucks and they do a great job layering shooters and pousse cafe’s, not that I make a lot of them. The reason a pipette works so well is that you can submerge the tip to the bottom of the shot glass and slowly release the liqueur. This displaces and pushes the other liqueurs up without intermixing the two liquids resulting in nice clean layers. So to make a layered shot you add the liqueurs to the glass from lowest density to the highest. There are a couple of exceptions, like the B-52 but more on that later.

Shooter KahluaYou can buy plastic 10ml pipettes for a few bucks, but you’ll also want to get a pipette bulb because sucking on the pipette to draw the liquid up isn’t very professional. The bulbs can cost around $10 to $15 but are well worth the investment.

The other reason the pipetting method is good is the speed, and as we all know bartenders need to be fast. There is no fussing around with spoons and the excruciatingly slow pouring technique  required to layer liqueurs. With the pipette you stick it in the bottle, suck up 10ml, place in the bottom of the shot glass, release and repeat. Once you have your pipetting technique down to an art, you can whip out two or three perfectly layered shots in a minute. Just remember that for proper technique, you need to remove the suction bulb and quickly place your index finder over the top of the pipette (like a barrel thief or when you use a straw to sample a drink). Then you can slowly release your index finger to release the liquid.



Shooter BaileysIf, as a bartender or even a mixology enthusiast, you want to impress people with shooters, do it the Jerry Thomas way and make them pousse café style. Layers make the drink look good and can increase your tips. Investing in a pipette and pipette bulb can help expedite your shots. There is no need to premix B-52's into a speed pour jug and slosh them out. They look like crap and they just don’t taste the same as the layered version.

As for making a B-52 using a pipette, you need to do the Bailey's layer last and you need to place the tip of the pipette between the Grand Marnier layer and the Kahlua layer. The only reason you do this is so the Bailey's doesn't mes up the sides of the shot glass. If you put it in after the Grand Marnier it will streak the bottom of the shot glass and the Kahlua will look cloudy.

The picture to the left is my first attempt showed the error of my ways. But it still made for a cool picture.

First Buchner Filter sets, and now pipettes!

Pretty soon my home bar is going to look like a laboratory!

I'm going to have to hire a SRA to mix my cocktails.

I'll bet that the droppers that come with children's/infant's Tylenol would do the trick as well. Most drug stores will also give you (or sell for about a buck) a plunger-style dropper. These all should have markings for ml and/or ounces on them. On a related note, one ounce equals 29.57 ml according to the website: http://www.sciencemadesimple.com/conversions.html

The only problem with the little droppers is that you need to use it about 5 times to get 1/3 of an ounce. Also, they are not very long, so the won't reach into the bottom of the bottle. Syringes look a little scary to some people too and needle sticks are an issue.

I never fill a shot glass right to the rim, most people spill it and get all sticky. Leaving a little "courtesy room" is polite. That's why 9ml pipettes work so well, they make a 27ml shot with 2ml of courtesy room.

A pipette looks like fun. And it would definitely impress the layman.

Big question, where does one find these things?

The best place to find pipettes is on eBay. You can usually pick up a bunch of them for around $10 to $20. Currently there is a lot of 50 pipettes going for $15 and seem to be in the correct range. Just wash them with soap and hot water before using them.

Some printer ink kits have a syringe-type fillers that aren't needed for many cartridges. Wonder how well they'd work

Really great way of layering, but personally I still prefer the up-side-down spoon. Being 18, and parties i bartend have mainly people aged 18-22 i make quite alot of shooters and just grew fond of the spoon layering, + i don't have a pipette :) but some just cant be done with a spoon (e.g. Thin Blue Line, which requires 2 small drops of blue curacao layered betwen 2 clear liquors) but can also use a normal straw and finger-seal it on other end.

And some shooters just tend to look really... unique when you intentionally screw with the gravity chart , e.g. Jellyfish:

just layer like that then drop 1-2 drops of grenadine through all 3 layers from the top. Creates a cool pink-ish jellysifh going through whole shooter
