Beverage Lab Sessions

After the excellent response to the Sensory Perception & Mixology presentation at Tales of the Cocktail, and the continuing demand, I'm going to be presenting this session a few more times in selected cities.

Session Information

When it comes to food and drink there is an infinite variation in peoples preferences. Part of this is personal, culture and experience, but a significant part is predetermined based on genetics. In this session you will learn whether you are a non-taster, normal taster or super-taster using a scientific taste test using PROP / PTC.

We will also look at how the four primary flavours, plus other less know tastes, influence one another and how best to use them in food and beverages. This will help you to understand how these flavours are perceived by the different groups of tasters. This knowledge is beneficial for those who are involved in the restaurant industry, or anyone who would like to better understand how flavours are perceived.

The presentation has been updated with additional information from comments and feed back received during the Tales of the Cocktail event. The expanded information includes wine and beer specifics, and some very useful information for chef’s and aspiring cooks.

Additionally, I’ve added bitter blocking components (AMP), and the session will include a very interesting tasting and demonstration of AMP’s effectiveness. 

The first session with be held on November 27th (6:00PM to 9:00PM) at the London Club, in London, Ontario. Tickets are $25 in advance and $30 at the door.
