Basic Falernum

Ingredients
250 ml White Rum
Zest of 3 Limes
5 Whole Cloves
3 Drops Almond Extract
1L Water
1 Kg Sugar (white)

Instructions:
1. In bottle place the Rum, Cloves, Almond Extract and Lime Peel.
2. Set aside for about 18-24 hours.
3. In a 2 Litre container mix sugar and water.
4. Shake until dissolved and now you have simple syrup.
5. Strain the Rum extract into the simple syrup.
6. Taste, and adjust the flavour of the almond, one drop at a time, until it is just detectable.
