Clementine Bitters

Ingredients
3 Clementine Peels
5 stick Mexican Cinnamon
2 medium Orange peel zest
1 oz Dried Orange Peel (by volume)
1 Whole Clove
1 oz Chamomile (by volume)
1 oz Gentian Root (by volume)
4 Bay Leaves
2 Cups Vodka
2 cups Rye Whisky
1 cup Water
2 Tbls Blackstrap Molasses

Instructions:
1. Crush all dry ingredients in a pestle.
2. Steep the zest in the rye and the dry ingredients in the vodka for two weeks
3. shaking occasionally.
4. Strain through cheesecloth, combine liquids and reserve spices.
5. Bring water to boil, pour on the spices, and steep overnight.
6. Strain spicy water.
7. Combine spicy water with flavored alcohol and add blackstrap Molasses.
8. Age for 2 more weeks,
9. rack or pour off, strain through coffee filter into sterilized containers.
 
Notes:
If you have the leaves for the Clementine's, use them also.
