Class: Bitters
Source: The Distiller's Guide (1818)

10 Gallons Gin
1/2 Pint Spirit of Wine
1 oz Essence of Lemon
1 oz Essence of Orange
1/4 oz Oil of Wormwood
1 lb Dried ORange PEel
Sugar

Instructions:

This will be a most pleasant cheap bitter, equally wholesome, and as good as many that are much dearer.

Notes:
The use of essences was quiet common in the 1800's as it was much cheaper than importing an equivalent amount of fruit, spice or herbs.
