Grapefruit Bitters

Ingredients
750 ml Grain Alcohol
1 Lemon Peel
2 Grapefruit Peels
1 oz Gentian Root (by volume)
1 oz Minced Ginger (by volume)
1 oz Dried Mint (by volume)
½ oz Whole Cloves (by volume)

4 oz grapefruit juice
4 oz water
½ tsp vanilla extract
½ tsp almond extract
½ tsp coconut extract

6 oz Sugar (by volume)
6 oz Water

Instructions:
1. Combine the first 7 ingredients in a seal-able jar and steep 24 hours
2. Add the next 5 ingredient (grafefruit juice, water and extracts)
3. Shake and strain through cheese cloth to remove solids and sediment.
4. In a pan add sugar and lightly caramelize
5. Add water to dissolve caramel and create a syrup
6. Combine the caramel syrup and alcohol solution.
7. Bottle

The proof of the grain alcohol is not stated.
