JPD Grapefruit Bitters

Ingredients
180 g grain alcohol
10 g Grapefruit zest (with pith)
60 g Grapefruit zest (no pith)
10 g Lemon zest
4 g Ginger Root (fresh)
5 g Gentian
1 g Spearmint, dried
5 g Lavender, dried
30 g water

Instructions:
1. Combine all ingredients.
2. Let steep for 12 hours.
3. Strain through cheese cloth and set aside.
4. In saucepan caramelize 3 tablespoons sugar. (dark brown)
5. Add ¼ cup water, stir until dissolved.
6. Add 3 teaspoons of burnt sugar syrup to strained bitters.
7/ Add ¼ cup of water to the mixture.
 
Notes:
The proof of the grain alcohol is not stated.
