Pimento Dram No.2

Ingredients
1/3 cup Allspice Berries (whole)
½ cup lime juice strained
2¼ cups Demarra 151 proof rum
3 cups water
1 oz. cinnamon sticks
1½ lbs. brown sugar

Instructions:
1. Grind Allspice coarsely and combine with rum in a jar.
2. Seal jar and steep for 14 days.
3. Boil water, sugar and cinnamon for ten minutes.
4. After 14 days strain, and reserve, the rum from the Allspice.
5. Add rum mixture to syrup.
6. Add the lime juice and shake.
6. Strain through cheese cloth and bottle.
7. Age for a minimum of one month. The longer the better.
