Vanilla Syrup (1884)

Class: Basic
Source: Canadian Journal of Pharmacy (1885)

Ingredients
1 oz Extract of Vanilla
1 Gal Simple Syrup
1/3 oz Citric Acid

Instructions:
Rub the acid with with some of the syrup, add the extract of vanilla, and mix.

Notes:
This recipe is fairly light on the vanilla, you may want to adjust to suit your tastes since vanilla extract is a lot cheaper then it was in the old days.

History
This is an old vanilla syrup recipe from the 1800's that seems to have been passed around a lot. Many newspaper articles, pharmacy manuals and home guides list this as the defacto recipe for vanilla syrup. It would have been used for soda's and such. There is a significant quantity of sugar in this recipe and in those days sugar would have been to preserve the product, since refrigeration was limited.

Comments
Simple syrup for this recipe is made by combining 14 pounds of sugar and 1 gallon of water. Heat to dissolve. Obviously you can reduce the quantity if you wish to make smaller batches of vanilla syrup.
