Chocolate Syrup

Chocolate syrup was one of the most popular drink ingredients at soda fountains.

Many soda fountains had their own proprietary recipes and from old documents we can see that that chocolate syrup was more than just plain cocoa and simple syrup. Vanilla was a common flavouring, as was cinnamon and clove, usually in the form of extracts or essential oils.
Chocolate Syrup
Cocoa Powder
4 oz
Sugar
4 oz
Water, boiling
32 oz
Vanilla Extract
1 oz
Simple Syrup, to make
1 gal
Instructions:
Mix the cocoa and sugar and stir into the water while boiling. Continue the boiling for several minutes then mix in the simple syrup and the vanilla.
