Turin Vermouth

Historically referred to as stomachic or aromatic wines, Turin type vermouth is typically a sweet or sweetened wine with a high alcohol level. The alcohol content should be 42° underproof. Grape based wines are traditional, but fruit wine is also allowed if it is declared. The sugar should be dissolved in wine as the wine itself must not be diluted.

Turin Vermouth Recipe:

Cardamom
½ oz
Cinnamon
½ oz
Cloves
½ oz
Coriander
2 oz
Fennel
2 oz
Star Anise
2½ oz
Peppermint
4 oz
Centaury Herb
4 oz
Balm Leaves
8 oz
Angelica Root
8 oz
Gentian Root
1 lb
Alpine Wormwood
7 lb
Brandy
6 lb
Alcohol
7 lb
Sweet Wine
16 lb

Instructions

To make the Turin Vermouth extract combine all of the herbs and spices and percolate with the brandy, alcohol and wine for three days. Collect the extracted liquid without expressing the solids.

To make the finished vermouth take ½ lb of the liquid extract, add 12 to 15 lbs of sugar according to the natural sweetness of the wine and dissolve in 2 gallons of wine. To that mixture, add 1 gallon of alcohol and 6½ gallons of wine.
