Bitters
Bitters found their way into cocktails as a saloon based remedy for America's raging case of dyspepsia in the early 1800s. Bitters were actually a key ingredient that defined the original cocktail from other drinks like slings and sours. Today the find use as a flavour accent similar to how pepper is used in the culinary world.
