Berlin Bitters

Each region in Germany had a local bitters, and this is a recipe for one in the Berlin area.
Berlin Bitters Recipe:
- Cinchona Bark
- 1 oz
- Bitter Orange Peel
- 1 oz
- Calamus Root
- 1 oz
- Gentian
- 1 oz
- Columbo
- 1 oz
- Rhubarb
- ½ oz
- Cinnamon Bark
- 1 tsp
- Cloves
- ½ tsp
- Alcohol (40%)
- 16 oz
Instructions
Mix the solids in a mortar and reduce to a coarse powder. Extract using slow percolation or maceration over a period of days.
To make the bitters, mix 1 fluid ounce of this extract with 6 ounces of alcohol and 10 of water. To make Berlin Wine-Bitters, replace the alcohol and water with sweet catawba or sherry wine.
