A type of "Alpine Bitters" similar to Swedish bitters.

- Cinchona Bark
- 1 oz
- Bitter Orange Peel
- ½ oz
- Sweet Orange Peel
- ½ oz
- Cardamom
- ¼ oz
- Caraway
- ¼ oz
- Cinnamon
- 1 tsp
- Cloves
- 1 tsp
- Nutmeg
- 1 tsp
- Alcohol (20%)
- 16 oz
Instructions
Nix the solids in a mortar and grind to a coarse powder. Extract by maceration or percolation using the alcohol.
The bitters may be prepared from this extract by mixing 1 ounce of the extract with 15 ounces of dilute alcohol (20%). Swiss Alpine Wine Bitters may be prepared in a similar manner by replacing the alcohol and water with sweet catawba or sherry wine.
